Scalloped Potatoes

This recipe is from The Compassionate Cook Cookbook, which is a PETA cookbook. They also have the recipe online, it’s about nine recipes down on their page. Although the scalloped potatoes are not the healthiest thing, they sure are yummy. I skipped the parsley in the recipe and I added several shakes of paprika over the top. It takes 1.5 hours to bake but it is well worth it.

  1. That looks really good! I haven’t had scalloped potatoes in ages, even pre-vegan. I’m going to have to try that someday when it’s not 100 degrees. :)

    I’m so sorry to hear about your fishie, though. I hope he gets better, but if not I hope he passes peacefully on to fishie heaven. There’s nothing worse than seeing your pets in pain.

  2. I have a whole bunch of potatoes that are going to go bad so this is perfect timing. I’m going to make the scalloped potatoes tonight. Yum!
