Mt. Washington Hot Bread

I have so many fellow blogger recipes I’m anxious to try. Last night, I tried Mt. Washington Hot Bread from Wait-and-See Pudding. The recipe was a cinch to veganize and it was oh so tasty. It’s so quick and simple to prepare too. The “butter” on top is Earth Balance. We had it for dessert yesterday and ate it for breakfast this morning. I’ll definitely be making it again. Next time I’ll be more generous with the cinnamon and sugar on top. Definitely give it a try. It was delicious both warm and cold.

I hope everyone (who celebrates Christmas) had a lovely holiday. We headed back to the “D” for a short trip home. We spent Christmas Eve with my parents and grandmother and left on Christmas Day. We towed a trailer on our way home with some items that just didn’t make it to Chicago the first time. U-Haul rents these nifty aerodynamic trailers that are easy to tow with almost any car. While it’s not a large trailer, it worked for our needs and was relatively easy to tow.

I didn’t get any pictures of our Christmas Eve dinner but we got take-out from one my favorite restaurants, Country Chicken Restaurant in Dearborn, MI. It’s a wonderful Lebanese restaurant. Don’t let the name fool you, they have several vegan-friendly items. We had fattoush and vegetarian grape leaves. It was delicious. They’ve also recently remodeled the interior and now make fresh hot pita bread there. It is so good!!! I believe it has a hint of cinnamon in it too.

Thanks to Bazu’s post, I knew the best way to try Soyatoo Soy Whip was on hot beverages. I made some Penzey’s Hot Cocoa and used the Soyatoo Soy Whip. It was yummy! My parents, grandma, and Rob all tried it too. My dad liked it on his hot cocoa so much that when the can was empty, he refused to believe me. He ended up breaking the plastic sprayer off in his attempts to get more out from an empty can. LOL

Vegan Thai Food, Ikea Spoons, and Squirrels?

Last night, we got take out from Thai Garden, which is located at 225 W. Golf Rd, in Schaumburg, IL. The food was absolutely delicious and they have quite a few vegan options. They have a whole section entitled “Vegetarian” which means they do not use fish or oyster sauce. They substitute with soy sauce. You have to love a place where they rank the hottest spice level as “melt down.” LOL We got three entrees to try with plenty of leftovers for today.

The first dish we tried was Spicy Tofu which is “hearty tofu stirred in Thai chili sauce and fresh celery, red pepper, onions, and basil leaves.”

The second dish was Vegetarian Deluxe which is “fresh cabbage, celery, baby corn, tomatoes, onions, bean sprouts, straw mushrooms, broccoli, red pepper, and tofu in chef’s special sauce.”

The last dish we tried was Popeye Tofu which is “delicious strips of tofu with spices on spinach and topped with our famous peanut sauce.”

All entrees come served with rice. I’d definitely order from them again. The food was flavorful and very fresh. The menu says they offer lunch specials too so I definitely want to try that. It also looks like they have some vegan-friendly soups. Yum! I can’t wait to go back.

I’m just getting settled with the kitchen. There is a small pantry closet which is doubling as extra cabinet space for the moment. I’m still trying to organize the kitchen to my liking. Plus, it took me a day or two to get the kitchen to my preferred level of cleanliness. I’ve made quite a few things this week but didn’t get pics of everything.

I made a lot of repeats including Thai-Spiced Sweet Potato Stew. You can find the recipe for it in Nava Atlas’ Vegetarian Soups for All Seasons cookbook. Another one of my favorite repeat meals is Rachel’s Eggplant Marinara (Coconut & Lime Blog). I had a taste for Eggplant Marinara and lucked out and found some decent eggplant at Meijer. The eggplant was pricey at 99¢ per pound but the meal was delicious as usual. I served it over Eden Kamut Spirals.

Living here means we’re close to Ikea! Yay!!!! I found some cool Asian-style plastic soup spoons there. A 6-count package was only $1.99 and I think they’re dishwasher-safe too.

We celebrated Christmas early with my grandma the evening before we left. Since we only celebrated for a short time, she didn’t have a chance to really fall asleep. This meant I couldn’t uphold my tradition of decorating the elderly with ribbons and bows while they nap at the holidays. So my grandma was a good sport and let me decorate her while she was awake with some bows. She even posed for a picture. Even 95-year-olds have a sense of humor :-D
