Yummy Vegan Breakfasts

Happy 2008! How embarrassing that the month is nearly over and this is my first post of the year. I’ve just been super-duper busy. I’ve been cooking and baking and thrifting but haven’t had a chance to blog.

How about some breakfast foods? Here are some of the yummy breakfasts we’ve been enjoying:

Pancakes! (with whipped Earth Balance and maple syrup). This is a picture of Rob’s plate. I actually don’t eat my pancakes with maple syrup. I don’t eat my waffles with syrup either. Some Earth Balance and some mixed fruit jam is what I like on them. Ok, ok, and by mixed fruit jam I mean I mix several American Spoon jams up myself to create my the perfect “mixed fruit” jam. We only eat American Spoon jam, even if it is a Michigan product. In case you are wondering, our place in Michigan (Metro Detroit) is still for sale, so it’s not exactly my favorite place in the world at the moment. Wow, what a way to get off topic, huh? Now you know why my co-workers don’t dare mention the word Michigan to me. LOL

I tried the tofu scramble recipe from VwaV. It was tasty and I served it with some fried potatoes, rye toast, and orange juice.

I’ve been on a banana bread kick lately. I’ve been trying out a bunch of different recipes for it. I really like the one from The Compassionate Cook, which is one my favorite vegan cookbooks. You can find the recipe for the banana bread here. Instead of margarine, I used Earth Balance. I sent a care package to my parents and grandma recently and I included several pieces of banana bread. Of course, baking your banana bread in vintage Pyrex is a must!!!!

And last but not least, a chocolate chip scone along with some raspberry earl grey tea from Tealuxe. I think vintage snack sets make dessert, err, breakfast, much more fun!
