Vegan Cinnamon Rolls

These cinnamon rolls were fantastic.  I actually took this picture back in March when my parents were visiting but have made them several times since then. My parents thought these were even better than the previous cinnamon rolls I used to make.  I even brought some in to work to share and my co-workers really liked them.  I used the recipe from Vegan Bicyclinguist.  You’ll have to play around with the frosting ingredients to get the consistency you want.  I think these taste best the day they are made. If you want to eat them the next day, you might want to reheat them a bit first.

Vegetarian Stuffed Grape Leaves

I finally decided to try making my own stuffed grape leaves.  I used the recipe from Food for the Vegetarian: Traditional Lebanese Recipes by Aida Karaoglan. In the cookbook, the recipes is called “Stuff Vine Leaves in Oil” or “Mehshi-wara’  ’inab bi-zayt”.  The grape leaves are stuffed with a seasoned mixture of rice, chickpeas, parsley, garlic, lemon juice, and olive oil. Rolling the grape leaves was more time consuming than I expected but the end result was so worth it. There was enough for eight servings. We ate some on Sunday and then we each had lunch for Monday, Tuesday, & Wednesday. I would definitely make these again soon.

On Sundays, I try to make a large batch of something so we have lunches ready for a few days. I’m not big on leftovers (or having to reheat my food in a microwave at work) so if there is something I like reheated, I dont’ mind taking it for a few days in row. It also gives me the freedom to make new things for dinner since I don’t have to worry about what we are taking for lunch the next day.  So if a new recipe is a total bust, I’ll just make an old standby for dinner (and lunch is already covered).  I’m not big on eating out. Not only is it expensive, I can make better tasting food at home.

Strawberry Pie, New Doormat, Twitter

I made a 6″ Strawberry Pie in one of my vintage Pyrex pie plates. I love this pie plate because it makes the perfect size pie for us. I usually just cut the pie into quarters, leaving two generous pieces of Strawberry Pie for each of us. I also made the graham cracker crust too.  I know it’s almost summertime when I start making fruit pies. The pie was delicious! I like to have a piece in the evening and then eat my other slice for breakfast…what a healthy breakfast, huh?

I’ve been looking for a new outdoor doormat. There was a cheap doormat that came with the house but it wasn’t heavy enough to be outside and usually ended up blowing into the shrub box. I found a suitable doormat at Super Target and it is also made from recycled rubber. I think it was $12.99. The previous doormat now resides inside the garage.

Finches at Bird Feeder, Spicy Rice Noodles

Hi all! We have a bird feeder outside one of the windows at the office. I was able to snap this cute picture of two finches:

Rob and I have been so busy. I’ve been making a lot of simple and quick foods. I made some Spicy Rice Noodles with Spinach, inspired from a recipe from the  Bangkok to Bali Cookbook.  Caputo’s had a 1 lb. bag of baby spinach on sale for $1.50. I had enough to make this and snack on some spinach while I cooked. The noodles are tossed with ginger, Thai chilies, garlic, low-sodium tamari, and just a teeny tiny pinch of sugar.  Yum! For the oil, I used peanut oil.
