English Muffins from Vegan Brunch

On Sunday, I decided to finally try a recipe from Vegan Brunch. I chose English Muffins because I never actually made my own English Muffins before. This recipe was definitely a winner. I used my square biscuit cutters to cut the muffins. They were delicious and I had mine with some Earth Balance and Black Raspberry Preserves (which I bought at my local farmers market). 

Since the dough has to rise, I will make these the night before next time. I think about every 10 minutes, Rob kept asking me how much longer? LOL He did say they were well worth the wait. I can’t wait to try more recipes from this cookbook.

Hot and Sour Soup

I really like the Hot and Sour Soup recipe from The Everyday Food Cookbook. I checked this cookbook out of the library and renewed it twice before finally deciding to buy it. A lot of the recipes are easily veganized such as this soup. I used vegetable broth instead of chicken broth, omitted the egg, and added a little extra tofu and shiitake mushrooms. The soup is simple to prepare and it reheated really well the next day for lunch. You can find the recipe HERE on Martha Stewart’s web site.

Just a quick post. This morning there was a Bullfrog in our yard. At first, it was sitting by our downspout and then it moved to our lawn, which is when I decided to snap this pic.

Potato and Kale Enchiladas

I decided to try a new recipe out for dinner last night – Potato and Kale Enchiladas from Veganomicon. You can find the recipe posted HERE. I thought they were ok, but my parents and Rob seemed to like them much more than me. I did think the roasted pumpkin seeds in the filling were a nice touch. Of course, I had to roast more pumpkin seeds than the recipe called for because I snacked on them while I made dinner.

My parents and Rob said I could make this any time for them. The enchiladas are very hearty and filling. Rob has leftovers for lunch and I put some aside for my parents to eat while I am work. I can’t really put my finger on why I wasn’t that crazy about the enchiladas. I’d probably make the recipe again and give it one more try.

One nice thing….I got to use my Pyrex “Friendship” pattern dish. Here’s a pic of the enchiladas right after I took them out of the oven:
