    First of all, let me commiserate with you about the cold- today’s wind chill is well into the negatives around here- BRRR.

    Second, those cookies look so good- I don’t blame Rob for raiding the freezer stash. I’m back on the baking wagon now and would love to try these. I don’t have vintage Pyrex, though… =(

    Isn’t it nice to have a live-in hand model? lol

    P.S. the weather around here is colder than anything I’ve ever experienced, especially with the terrible winds. It doesn’t help that I have to venture outside just about every day to go to the store. I really miss my car. =(

    Pinknest, they’re not quite as thin as they appear in the picture. Rob likes puffier cookies and I think thinner ones. I ended up pressing them out more with my hand to get a thinner cookie and they turned out great. I know sometimes when I try to do that with other cookies, they burn. Not these ones!

    Bazu, ha ha, love the live-in hand model comment. Oh my goodness, no vintage pyrex….get to an estate sale pronto!!! 😀

    Midwest Vegan, they froze extremely well…well, the ones that Rob didn’t snitch that is…the hardest thing is waiting for them to thaw.

    Kati, thanks for the nice compliment. Oh I feel for you having to walk to your destinations in this weather. It’s miserable. Keep warm. This snow today isn’t making it any better. And I’ve seen a few crazy fools who weren’t wearing hats and/or gloves! Pure Insanity!!!

    I’m making these next week FOR SURE, and will post photos as evidence that, when I want to be, I CAN be useful in the kitchen. I told my boyfriend that I’m making him sometehing sweet, and where I found the recipe, but I expressly FORBADE him to visit your blog. :o)

    One li’l question: what kind of peanut butter do you use? I shop at Whole Foods, and the array is as dizzying as it is dazzling.

    Yikes. “Sometehing” should, of course, be “something”. I’m pointing the finger of blame at, yes, my fingers, who are too excited about getting into the cookie dough to be expected to type without error!

    Hi Jodi, I’m so excited you’re going to try the cookies. I’m positive your bf will love them. Rob (my hubby) says they are his favorite cookie now. As for the peanut butter, my favorite is Trader Joes natural creamy salted peanut butter. Wow, that was a mouthful! When I can’t find that, I use the Whole Foods generic 365 brand natural peanut butter or the 365 Kids Natural PB when I can’t find the other one.

    I like to mix up the natural peanut butter a day or two before I use it and put it in the fridge…this helps it firm up a bit and makes it easier to use in baking. If you have any other questions, feel free to email me…vegandivablog AT yahoo DOT com 😀

    What a great recipe! I found this when I searched for a vegan pb cookie recipe. Tried them out tonight – YUM! I flattened my 2nd batch about halfway so they were thicker, but not still balls. Perfect! Thanks for the great recipe! =)
