Eggplant Lentil Stew, Burritos, Cookies, Thrifty Finds

    I’ll bet the stew was even better the next day…

    I don’t think the burrito pic is boring.. it’s one of my favorite things! black beans, avocados.. and spice.. how can you go wrong?

    That lentil stew looks really good. I’ll have to try that.

    Emmy, what do you mix in with your rice? Is it white or brown? I love that rice that they serve on the side at restaurants with fajitas, but I have no idea how to make it…looks yummy!

    Hi again: I just checked that recipe and it even gives directions on how to make pomegranate molasses! That’s great since I don’t think I’ve ever seen it in this neck of the woods….;o)

    The eggplant lentil stew sounds delicious. That’s a much more adventurous way of using the pomegranate molasses than I came up with…I just threw some in a stir fry! I still have some left so I might have to try this.
    Your chocolate chip cookie looks just perfect πŸ™‚

    mmmm, it all looks so good! we ate great veggie burritos on our holiday, so many i thought i’d never want another one, but now i’ve got to try yours – i’ve never had avocado in a burrito before.

    Whoops! I forgot to include the picture from the Martha book of the over-the-top gingerbread mansion. It’s up now.

    Aurora’s Mom, I didn’t even realize she had a recipe for the pom molasses. That’s great! My rice is also based off another Simply Recipes recipe. I use the rice from her Arroz Con Pollo recipe. Here are the changes I made to it:

    * used canola oil instead of olive oil
    * used more garlic (3 or 4 cloves)
    * used 3-1/2 cups vegetable broth instead of chicken stock
    * used 2 heaping tablespoons of tomato paste
    * added 4 large diced roma tomatoes
    * used fajita seasoning instead of oregano (I used a lot more than a pinch)
    * I was out of jalapenos this time but normally I add them
    * freshly ground black pepper to taste

    The rice is really tasty and I like that it’s more of a dry rice and not smothered in sauce. You can play around with the seasonings to find the right match for your family. Hope it turns out well if you try it πŸ™‚ Oh, and for the rice itself, I used white long-grain basmati rice.

    Sara, The funny thing is I used to hate avocados until about two or three years ago. Now I add them to everything. They were really good in the burritos.

    I cannot find pomegranate anything here. It is so annoying as I live in Africa and we should be at least able to get fresh pomegranates. When I visited the Arab Emirates I loved the fact you could get fresh pomegranate juice almost at each street corner.

    The black bean and avocado burritos sound great.

    Hee hee look at young Martha Stewart! I love those old pictures. That eggplant dish looks fabulous to me! (That’s it- I should start just injecting eggplant!) I’ve only had Iranian-style pomegranate molasses, which is mouth-puckeringly sour. (It’s often used instead of lemon juice). I wouldn’t know what to do with the sweet stuff!

    I haven’t made the cookies yet, but i’m not really a ‘vegan blogger,’ so maybe i don’t really count! Either way, those cookies do look wonderful tho i must say i would have to add about 5x as many chocolate chips to mine!! I counted five chips in the one you show.

    Nice nice eggplant lentil stew, too. Pomegranate molasses?? I never knew there was such a thing… Must warm the insides nicely.

    You’re not the last blogger to make those cookies – I’ve never made them, either, but then again I don’t own the book. Do you have The Everyday Vegan, too? It seems like Vive may be better than TEV from what I’ve seen on peoples’ blogs.

    Wow that gingerbread mansion is very impressive. I mean, look at all that intricate icing! Who has time (or patience) for that?? I would just want to eat it, already.

    And I think your burrito looks yummy – “unexciting” or not!

    Who in the world would have time to put all those pretzle toothpicks on the windows? That mansion is crazy. Just catching up on your old posts since I’ve been MIA for a while. Great score with that Middle Eastern restaurant. Looks like you were able to pick up quite the assortment of goodies.

    Bazu, That’s so neat, I didn’t even know there was an Iranian-style pom molasses! Hmmm, I guess if I had that kind, I wouldn’t be taking nips of it from the bottle.LOL!!!

    Aurora’s Mom, you’re welcome. There was a Mexican restaurant where we used to live that had this wonderful spicy rice. It was drier and oh so good. I haven’t been able to match the taste but I see that some people use Annatto Seeds in their rice. I picked some up this weekend and will let you know how the rice turns out with that next time I make it.

    Karen, there actually were lots of chocolate chips but they ended up in Rob’s cookies. He likes a lot of chocolate chips in his cookies so I scoop the batter out accordingly πŸ™‚

    Kati, I have TEV also but I tend to use Vive a little more. I like the desserts from Vive better. My main go-to recipe from TEV is the Maple Banana Bread. I’m sure the Chicago library system has a copy of Vive. Maybe you can check it out and see if you like it before buying it.

    VV, glad you’re back. I was wondering how you were doing. There are like six pages dedicated to the construction of that gingerbread mansion! She used gold-leaf foil for the roof too. It’s pure insanity. Oh and the Middle East Bakery was so good. I can’t wait to go back!!! I wish everyone had access to such a place. The assortment of vegan food was wonderful.
